Strawberry

The strawberry is the fruit that teaches people about pectin, usually the hard way. It is delicious, very wet, and low in pectin, so it makes a runny jam unless something is done about it. It is also the easiest berry in the world to freeze, which is what most of a glut should become.

The season

Late June and July, and briefly. Field strawberries in this region have a season measured in weeks.

Acidity decides the method

Strawberries are acid at roughly pH 3.0–3.9, so no acidification is needed for any jar.

This is a reference guide, not a recipe authority and not medical advice. The one organism the safety rules here are written against is Clostridium botulinum, and the one way to be protected against it is a tested recipe followed exactly — substitutions of the acid, the sugar or the salt are not cosmetic. Where the national food authority publishes advice for a specific food (Baltic fish, wild mushrooms), that advice outranks this page.

Method by method

MethodVerdictThe note
FreezingBestHull, dry, open-freeze on a tray, bag once solid. No sugar needed.
DryingOKSlices dry into intense sweet-sour chips; whole berries are too wet to dry well.
FermentingPoorNot a traditional ferment beyond wine.
Pickling in vinegarPoorNovelty rather than tradition.
Jam and sugar preservesGoodLow pectin: needs a pectin sugar, a cooking apple or redcurrants in the pan, or lemon juice and a long boil.
Water-bath canningGoodJam, syrup and juice all process safely without added acid.
Pressure canningNoUnnecessary for a high-acid fruit.
Curing and saltingNoNo tradition.
SmokingNoNo tradition.
Root cellaringNoA ripe strawberry lasts a day or two, refrigerated.

The classic preparation: Open-frozen berries and freezer jam

For the freezer: hull the berries, dry them properly on a cloth, spread them in a single layer on a tray, freeze until hard and only then bag them. Wet berries bagged straight from the colander freeze into a single block. For freezer jam: crush the fruit raw, stir in sugar and a pectin intended for uncooked jams, let it stand until the sugar has dissolved and the mixture thickens, and put it in the freezer. Nothing is boiled, so the flavour and colour stay far closer to fresh fruit than any cooked jam manages — and because nothing is boiled, it is not shelf stable and lives in the freezer or the fridge.

Preparation that matters

Hull after washing, not before, or the berry fills with water through the hole. Dry them properly; surface water is the enemy of both a loose freeze and a good set. Sort by ripeness: slightly under-ripe berries carry more pectin and more acid and are useful in the jam pan, while the softest ones go straight into the freezer bag for smoothies. Do not wash berries you intend to store even for a day — moisture is what starts the grey mould.

What the preserve is worth

Strawberries are a genuinely good source of vitamin C and of anthocyanins, and freezing keeps most of both. Jam-making does not: a long boil with sugar is the harshest treatment vitamin C gets. If the point is nutrition, freeze; if the point is a jar of jam on the shelf at Christmas, accept that it is a sugar preserve with fruit flavour and count it as one.

Frequently asked questions

Why is my strawberry jam runny?

Because strawberries are low in pectin. Use a jam sugar with added pectin, add a chopped cooking apple or a handful of redcurrants to the pan, or add lemon juice and boil longer — although a long boil costs you the fresh flavour.

Do strawberries need sugar to freeze?

No. Sugar or syrup packing gives a slightly better texture on thawing, but plain open-frozen berries are perfectly good and far more useful.

Can I water-bath can whole strawberries?

You can, and they will be soft and pale. Strawberries are best frozen whole or turned into jam; whole canned berries are the least rewarding option.
